here's what you need:
3/4 c brown rice flour
1/4 c cocoa powder
1/4 c cocoa powder
1/2 tsp baking powder
1/2 tsp salt
1/2 c coconut cream (you can put a can of coconut milk in the fridge for a few hours & the cream will rise to the top, then just scoop it out)
1/4 c vegetable oil (i'd like to try coconut oil next time i make them)
1/2 - 3/4 c agave nectar
1 tsp vanilla
1/2 c chocolate chips
you can also add:
handful of unsweetened shredded coconut
handful of chopped pecans
how to whip them up:
oven to 350, grease 8" square pan.
whisk or sift together all the dry ingredients
in another bowl whisk together coconut cream, oil, agave & vanilla
fold in the dry ingredients until just combined, don't over mix
fold in chocolate chips & extras
pour into pan & back for 15-20 mins
let cool, only slightly because you won't be able to wait very long before digging in! ;)

Thanks! Looking forward to making these! We've been totally vegan for two days now and I love it! It's been a very long slow process which is probably best, but Rich and I were just talking tonight about how much better we feel. Do you have any favorite recipes for lunch or dinner? that's where we're having a hard time, we're super busy and aren't making meals from habit anymore so it's challenging :)
